Chilled Chicken Salad

The perfect way to use up leftover grilled or baked chicken. It makes a great lunch or small snack. No cooking needed if you have the leftovers. For dinner the night before, I bake chicken tenders with salt, pepper, garlic powder and a little lemon juice at 350 degrees for about 20 minutes.

This Chilled Chicken Salad is so tasty and easy to create. Ready in minutes and no hassle. It's light and nutrient dense which is perfect for my tougher work out days.

Just chop the refrigerated chicken, 1 string cheese and avocado slice.

Apple is a tasty, sweet crunch to add too!

I just carefully toss it together (so avocado stays as cubes) and sprinkle cashews on top.


This is my kind of lunch! No fuss, no ovens or microwaves. Just delicious, fresh chopped ingredients.
